This vegetarian curry,is made using cauliflower and bell peppers,more veg.of your choice,can be added.This a very simple curry,that even a first time, curry cook,will fined easy.I use, shop bought curry paste,for the base of this curry,the one I've used is a balti paste,but any other type will do and give different flavour, to the finished curry,

Cauliflower and bell pepper curry image

Cooking and preparation time about 20 minutes-2 servings


1) Florets of cauliflower-amount depending on servings

2) bell peppers finely sliced

3) jar of shop purchased balti, or other of choice curry paste

4) 1/2 inch of cinnamon bark

5) 2 tsp cumin seeds

6) 1/2 tsp turmeric

7) 1 tsp coriander paste or a handful of fresh leaves and stalks

8) 1/2 cup of coconut milk

9) salt to taste

10) 2 crushed garlic cloves

11) 1/2 inch peeled and grated fresh green ginger

12) cooking oil,I use coconut oil but at £7 or $10.50 a jar it is expensive,so use veg.oil or light olive oil

13) water as needed

14) 1 tsp tomato puree

15) 1-2  tsp mango chutney ( optional) or 1 tsp sugar

16) pilau rice ( 1 cup in a large pan of boiling water for about 10 minutes) is enough for two

17) 1 tsp garam masala


a) heat oil in a solid pan over a medium heat

b) add cinnamon and cumin seeds and fry for 1 minute till aroma is released

c) add garlic and ginger stir fry 1 minute then add tomato puree and fry 1 minute

d) add 2 tbsp curry paste and a little cold water if needed and stir fry for 1 minute

e) add turmeric powder

d) cook cauliflower separately till firm but cooked and drain

e) add chopped bell peppers to pan,coconut milk

f) add a pinch of salt more can be added later if needed

g) add mango chutney/sugar

h) add water if needed,simmer till oil stars to separate from sauce

i) add cooked cauliflower

j) add coriander and garam masala stir till cauliflower is heated

Serve with rice and/or nan bread

This curry tastes better the next day so pays to make enough for that !

Chopped chilies can be added at start of cooking or at the end for a hotter curry and of course other spices can be added by the experienced cook.
